i have long been a fan of haloumi cheese--squeaky, super salty, fries well. but after frying, i didn't know what to do with it, and even with sliced tomato or fresh herbs on top my preparations was always dry and lacking. following Candy's advice i drizzled some lemon flavored olive oil on top and it was totally perfect. it's a great combination of flavors, and rounds out this great cheese well. thanks!
