GUMBO – Home Cooking Dish of the Month, March 2017

masha | Mar 1, 201711:05 AM

Welcome to the reporting thread for our March Dish of the Month. This month we will be cooking Gumbo.

To learn how we selected this dish, go to the voting and nominations threads, linked here: A big thank you to all of the hounds who participated in these threads!

So, what are the defining characteristics of Gumbo? See this discussion of the dish, which describes the history and myths, including the choice of okra or filé as a thickening agent, as well as the “raging controversies” over the proper ingredients for the brown roux. (hat tip to meatn3 for this link, which she shared on the Voting thread).

Here are a few links to gumbo recipes to get us started:

Please use this thread to report on your experiences cooking Gumbo during the month of March. Pictures of your dishes and links or descriptions of the recipes that you used are always welcome.

And, remember, if you want to share a recipe for which you are not the author, please respect the author’s copyright by either: (a) including a link directly to the source of the recipe, or (b) if no link is available, use your own words to paraphrase and explain the instructions for making the dish (although you may directly quote any list and quantities of ingredients).
