So it's a dreary day up here in NoVA and I decided to make it a cooking kinda day. While trying to figure out what to make, I opened up my pantry anf a jar of Zatarains Gumbo File that I recently bought, was staring me in the face.
I've never made gumbo...only jambalaya, red beans and rice and such. My first thought is to make chicken gumbo because I need something that freezes well and I don't think seafood gumbo will do well in the freezer. Actually, could I make the chicken gumbo and throw the shrimp in when needed?
Next is the recipe. I have my stepmom's recipe but it is for seafood. I have a chicken gumbo recipe from a junior league of New Orleans cookbook that she gave me back in the 80s and there are a few recipes on epicurious, but using red peppers???
Then my final question is okra vs file? It looks like both are thickeners so it should be one or the other? I was kind of thinking if I can't find fresh okra(only frozen) then file is the way to go???
