Just back from Barcelona, and one of my chief regrets is not getting to try calcots a la planxa, this traditional catalan dish. So I figured I'd make it myself!
Firstly, how should I grill the spring onions? I have a grill pan, and an oven. For how long? EVOO?
And most importantly, does anyone have a wonderful romesco sauce recipe to share? There are a bunch on EPI, but I am not a connoisseur and don't know which would be best. Thanks!
