I just made grilled banana chicken (making up the recipe) and it turned out really well. I have never posted on the Home Cooking Board before, but I thought I'd share my recipe:
Grilled banana chicken by Dave M.P.
1 ripe banana
Juice from 1/2 of a lime, squeezed
2 T soy sauce
2 T olive oil
1 T hoisin sauce
4 T juice (orange, lemonade, apple, etc.)
1-2 lbs chicken breast (I used about two pounds of boneless breast strips)
Mush the banana (if it is not ripe enough to really mush, cook it briefly in a frying pan until it becomes soft, then mush it). Add all of the other ingredients, followed by the chicken. Marinade in fridge for an hour or two. Grill.
The flavor is really nice, you can definitely taste the banana, though it is not too overpowering. It would probably also be great to add coconut milk. I would love to hear if anyone has similar recipes or other ideas for interesting, new chicken marinades.
