How to grill a tri-tip (w/pics)

With all the recent talk about using Weber bbqs & wood flavor, here's what we did today.

First we made coals from red oak logs. We slowly grilled the 2 lb tri-tip over low heat for 1.25 hrs. After 40 minutes we flipped it and basted with a solution of salt, pepper, & white vinegar. The slow cooking breaks down the meat & creates a great crust with the flavor of red oak. Sliced thin & served with beans, bbq sauce, garlic bread, & salsa.
