Great meal - alone

I'm going to be in Vegas for a conference. Conference starts Friday, but I'm coming in Thursday. I want to eat a fabulous meal that will blow me away. From my reading, I'm thinking some of the places at the Wynn look pretty fantastic.

But the problem is, I'll be alone.

Now, I eat alone a lot. I'm a foodie married to a wonderful - but decidedly non-foodie - woman. So I'm used to it. But there are places where it's OK to eat alone, and places where it's not. My experience in general is that the fancier a place is, the harder it is to have a good time eating alone.

So, my question - what's the best place to eat in Vegas (preferably within reasonable distance from Paris, where I'll be staying), where I won't feel like a leper eating alone. Money no object. I want eat food that simply doesn't exist where I'm from (Portland, OR).
