Great lunch at Dominic's Bakery in Waltham yesterday

My wife and I stopped by Dominic's Bakery, on Main Street in Waltham, yesterday for a late lunch. When we arrived a little after 2:00, the case was empty of pre-made sandwiches and the hot food looked like it had been sitting around, well, since around lunch time. But the steam table still had plenty of chicken parm cutlets, so we each ordered a chicken parm sandwich, and they were great. Actually, the chicken cutlet itself was nothing special, and in fact clearly had suffered from having sat out in the steam table. (By contrast, the chicken cutlets served in the sandwiches at Comella's, on Washington Street in West Newton, are made to order and thus are always hot and crispy.) But once they put those cutlets onto their amazing bread, they transformed these ordinary chicken parm cutlets into a great chicken parm sandwich. Can you imagine how good they would be if they actually made the chicken to order? (Although can you imagine how long the already long lunch-time line would be, too?)
