This restaurant does not get very much love on this board but they do put out some excellent dishes. Yesterday they were really on their game. We had:
Crispy duck salad with pineapple - crunchy and tamarind-tangy and as hot as we asked for it to be ("very spicy").
Beef salad with cucumber and tomato - the lime juice dressing was REALLY hot and completely irresistible.
Oxtail soup - garnished with crisp-fried shallots, deeply savory, and perfectly hot. I do like it hot, but found that eating this with some white rice made it possible to taste the other flavors involved (tamarind and cilantro among them).
Shrimp with garlic and pepper - the shrimp were well set off by the fried garlic. I love the sauce on the iceberg lettuce the dish is served on. the noblest end for iceberg lettuce.
Steamed whole red snapper with garlic, hot chili, lime juice and cashew nuts (pla manaw) - this was the reason we started going to this Pam's and they took it off the menu ("people only wanted fried fish'). They will still make it if asked. It was a good-sized and very fresh snapper, cooked to curd-y perfection, and the steaming juices accented the fish very well.
