I love cheese. So does Bride of the Juggler. We used to go to our local (Philadelphia) cheese shop and buy 3 or 4 interesting cheeses almost every week, then realize that we were spending $30 a week (well, not every week) on cheese. So we stopped that habit.
The question is, which cheeses out there are *really* good and don't break the bank? I consider under $10 a pound "cheap". I need a few more interesting (and reasonably available) cheeses to have as regular "staple" items. There seem to be 100's of cheeses in the $13/lb range.
For example, our "staple" cheddar that we always have in the fridge is Cabot extra sharp from Trader Joe's for about $4.50 a pound.
We don't mind splurging once in awhile. On the extreme, we love Humboldt Fog from California ($20+ / pound). Some of our favorite French cheeses (e.g. Ossau-Iraty) have gotten expensive due to the Euro (used to be $15/lb, now closer to $22).
So, any really good stuff $10/lb and under?
