There's a new meat purveyor at the Dupont Freshfarm Market, selling organically-raised goat, buffalo, pork and rabbit. If I had my act together, I'd be able to provide the name, but it is a farm in Culpeper. VA. They have sausages, jerky and soupbones, too. There are now four really excellent meat sources coming to the Sunday market, and I have my favorites, so I haven't had a chance to explore this new purveyor's wares. I did buy a package of buffalo soupbones for stock, and it was generous and very meaty. I got some shortribs, too, but haven't had a chance to cook them yet.
