Gluten free bread dough in a food processor, what do you think?

I was diagnosed with Celiac disease about 4 years ago and since then I have obviously changed how and what I cook. I don't bother with much baking anymore, except for gluten free bread almost every week. (so much better than the expensive store bought junk!) I have found that I only use my Kitchenaid mixer for the bread and the occasional cheesecake, or whipping cream. I think the mixer might die soon, and was considering replacing it with a high end food processor, the 16-cup Breville Sous Chef. (

That way I could do my bread, and the few other things I do in the mixer, plus get all the great features of a good food processor, while not having two different appliances. I need to do two loaves at a time (for the family), which ends up being about 10-11 cups of dough. (gluten free dough is not like regular bread dough, it's like extra thick cake/brownie batter)

Thoughts, opinions, could this work? Bad idea?
