Fruit compotes with stevia or splenda?

Has anyone ever tried this? I got some lovely rhubarb and strawberries and nectarines at the farmer's market, and aside from trying GretchenS's pork roasted on rhubarb recipe, I'd like to try to make a compote with some or all of these fruits and stevia, or maybe splenda. I'm not afraid of tangy, so recipes with minimal amounts of sugar or honey might work too.
