My wife and I will be moving to Houston from Los Angeles in a few months. On our last visit to Houston, we checked out two sushi restaurants - Nippon and Sushi King (as an aside, we thought Nippon had reasonably good fish, but weren't impressed with the fish at Sushi King at all). Our ideal sushi place is somewhere we can sit at the sushi bar and gradually build a relationship with the chef over many visits - getting to know their style, and getting to trust their judgement and recommendations (and excellent fish of course...). At both restaurants on our last visit, we were handed a sushi menu and didn't really interact with the chefs at all.
Can anyone recommend a sushi joint where they enjoy being a "regular"?
