A family member has had allergic reactions for years without being able to pinpoint the cause... and it's a complicated back story... but it turns out that when he avoids anything in the mint family and any nightshades he goes mostly reaction-free. So not only does he have to avoid a bunch of herbs and spices, he can no longer have potatoes, tomatoes, peppers, it is very sad!
He feels that his diet is too plain and is getting bored.
I am not a bad cook, just a simple one! It is hard for me to be creative, so I need your help. These are the herbs and spices that he has tested and can tolerate: allspice, caraway, cumin, coriander, bay leaf, ginger, dill weed, celery seed, turmeric, mustard, black pepper, cinnamon, nutmeg and cloves. Alliums (onions and garlic) are fine.
I know a few pairings of these that work well, like allspice and bay leaf, but need help with more combinations (in savory dishes mainly). Or if you have a suggestion of a new spice to try, even an exotic one that we have to special-order. I would LOVE a decent substitute for oregano, thyme, or basil! Thanks!!!
