Fresh fish/quality of ingredients at Koreatown restaurants

Tonight I learned that all the fish at Sa Rit Gol is imported frozen. Does anyone know what Korean restaurants serve fresh fish, or for that matter, how to calculate the odds (for those of us who don't speak Korean) that the bulgogi and yu ke are prime or choice or grass fed, the chicken full of antibiotics or organic?
