French Bistro

By chance I ended up eating at two French style bistros in Manhattan this week.Raouls, which i used to frequent more often and is a favorite and Pastis which was a first for me.Raouls is an old chesnut that has never let me down,Pastis was overpriced with brusque service almost to the point of being rude.I will not return except for a drink at the bar possibly. It made me think about the popularity / pricing and creativity behind McNally establishments, and severe lack of similar in Monmouth County? He has been acused of being the Disney of Manhattan dining, but IMO,though I understand the sentinment,he is far better than that and does a convincing job of transporting the diner to Paris,Lyon or where ever at least for an hour or two. This in my mind is the only reason I was able to swallow $12 glasses of sancere and $14 sardine appetisers without the heimlich manoeuver being needed.Focusing on the minute details is at the core of his (thier) sucess. At any price point,I can not think of one restaurant in Monmouth Co that "Transports" me to another place in the way Odeon,Balthazar or Pastis does. For better or for worse? Why is it only in Manhattan?
