Fregola and/or Peking Duck broth

So, today I made a nice batch of broth made from a Peking Duck carcass (threw in some ginger, scallions, and shallots). I want to make something other than soup for dinner Monday night using this - any suggestions? I have a bag of fregola and was thinking of a risotto-like dish, but I don't have any leftover duck to throw in (hm...confit would've have been nice also). I do have some lop cheong (Chinese sausage). Could I do something with this? Or skip the fregola altogether. Just looking for some ideas! Thanks in advance!
