Freezing Stuffed Prunes

For New Years Eve, I am making Julia Child's Roast Goose stuffed with Prunes and Foie Gras from Mastering the Art of French Cooking.

The recipe involves simmering the prunes to soften them and then stuffing each prune with a mixture of foie gras, liver and sauteed onions (among some other things).

I'm pretty sure I can make the stuffing in advance and freeze it (I'm going away the week before and won't be returning till the night before New Years Eve). But I'm wondering if I can go ahead and fill the prunes and then freeze the stuffed prunes...
