I bought some veal kidneys from FreshDirect and little did I know that 2 lbs is a LOT of veal kidneys. I am sure I can't finish them in one setting, so can I freeze the rest? Will the texture or taste change substantially after I freeze them now and thaw in the future? If freezing is not an option, how long can I keep them in the fridge?
I also have a lot of trimmed fat from the kidney. Is it the suet and supposed to be very good? How should I use this fat?
