Make ahead and freeze bake sale items?

I work with a very small animal rescue organization and we have been invited to have a booth at an upcoming festival. It won't be a huge event, they're expecting to have about 200-300 people, but it will be a great opportunity to let people know about our organization. It's not really feasible for us to have animals there to adopt, but we need to have something to draw folks to our booth, so we've decided to sell t-shirts and baked goods. At the moment it appears I will be the only one providing baked goods, so I'm hoping for some suggestions of items that I can bake the week before and pop in the freezer as well as any other suggestions. It will be on June 20 and the temps could potentially anywhere between 70°-90°, so nothing that will turn into a melted mess, like anything with frosting or chocolate dipped. And again, since it's just me, nothing that requires any decorating.

Some of my initial thoughts were either banana bread slices, or mini banana breads, chocolate chip cookies, molasses cookies, brownies, sugar cookies, and I make a great peanut butter cookie, but I know how people can be about anything containing peanuts, so I'm on the fence about those. I welcome any suggestions.
