Hi 'hounds, I have a super-gamy, super-tough lamb shank sitting in my freezer that I don't want to waste (it wasn't cheap!). Any suggestions on what to do with it to make it less aggressive-tasting and more tender? Open to ANY suggestions. Thanks!
