hello fellow chowhounders! i am looking for a good recipe for frangipane cream to use in an apple tart (basically a pastry cream mixed with almond paste). even the recipes for pastry cream alone seem to vary wildly. i made the apple tart with frangipane cream a while back in a CIA pastry class, but have since misplaced the recipe (i think i can duplicate the rest, since it was basically a puff pastry crust layered with the cream and then sliced apples). can anyone help????
