Foodie needs help on her quest to eat her way through NOLA

I’m heading to New Orleans in early January and am excited to embark on this culinary adventure. I’m wonderfully overwhelmed by the food options and would like some advise on where to go so that I don’t miss something. I’ll be there midweek for four days so will miss out on brunch but can do happy hour. With my limited time, I’m trying to fit in all the big hitters, which is impossible! Here’s my list:

Lunches at August, Cochon Butcher and Commander’s Palace
Happy hour at Luke’s
Dinner at Cochon, Boucherie, and ??
Chargrilled oysters at Drago’s and BBQ shrimp at Mr’s B’s –maybe?
Maybe late night po boys at Verti Marte

I’d like to know if I’m missing anything on my list or if I should substitute other restaurants for ones I’ve listed such as NOLA, Jacque Imo’s, Gallatoire’s, Brigtsten’s, or Dante’s. I’d like classic NOLA food one night but do not want to spend a crazy amount for it. I’d also like seafood one night but am not sure where to go—GW fins?? Is there a seafood place or place with classic NOLA food that’s reasonably priced? We have a car and can definitely get off the beaten track.
Are there any recommended happy hour spots? Prix fixe lunch specials spots that I’m missing?
