Food & Travel - West/South Ireland

Thanks to the many posts on Dublin eats, there are more than enough suggestions to fill our two days in Dublin.

I'm hoping for suggestions in the Shannon/Cliffs of Moher area and Cork.

Also looking for answers to following if anyone can oblige.

flying into Shannon mid morning on a Wed (26/Nov) and departing Dublin on Sun (30/Nov).

My wife and I as well as two great buddies. We are active oriented, I love food (the others tolerate my passion for it and it does not rule their lives like it does mine), We like historic touring but if done day-in day-out it becomes quite taxing. We would like good ways to experience Irish culture/people.

Have a few questions:

Car rental agencies to use? (I don't know if Europecar is in Ireland, but I used them numerous times elsewhere in Europe).

Outdoor activities? looks like we will sea kayak near Cork for a 1/2 day and also do some hikes (suggestions on nice hikes welcomed).

Historic sites?

"Irish/regional" food not to miss? Also Cheap eats.

Cheap lodging ideas?

Itinerary suggestion: current itin would be arriving Shannon, hiking cliffs of Moher, staying overnight somewhere near. Early morning drive to Cork for sea kayaking, then? At this point we think we would like to be in Dublin by Friday night through our departure on Sunday.

Good websites to research Ireland and it's counties?

THANKS.
