Ok, so the guest list is set and the numbers are confirmed! I will have 40 confirmed guests for a party I'm having this weekend. My menu looks like this:
Cold/ room temp Beef tenderloin sliders w/ horseradish sauce
Cold/room temp Pork loin sliders also with a horseradish sauce
Black bean and rice salad
Mixed green salad with vidalia onion and poppy seed dressing
Cheese and crackers
I am preparing all of it myself the day before with finishing touches the day of.
I need to know how much of each I should serve? Do I need to have 40 servings of everything? I have a whole beef tenderloin and I will get a pork loin roast at Costco. How much shrimp should I buy? 6 lbs? Do I have too many choices?
