Foie Gras Butter at Cafe Rouge Meat Market

I was at the Cafe Rouge Meat Market yesterday picking up a few lamb loin chops for dinner when I noticed house made foie gras butter. The butcher told me it was new; a bit of a whimsical experiment, they might keep making it if people like it. As a die hard fan of both foie and butter I couldn't resist. I bought a small slab, grabbed an Acme baguette on the way home, and dug in.

This stuff is delicious. It has the incredible, indescribable taste of foie infused throughout. But it's not too overpowering, the flavor is nicely muted, very smooth and mellow. The butter lends a creamy texture and serves as an excellent medium.
It took quite a lot of willpower to not eat the entire baguette and slab in one sitting, but I had to save room for my lamb. That didn't stop me from making a late night snack out of it.

The butcher told me it has all sorts of cooking possibilities. You could add it too a sauce reduction or throw it in with pasta. I'm thinking a generous slab melted over one of their dry aged steaks would be heaven. The possibilities are endless.
At $20/pound, it isn't cheap. But with foie normally running at $50/pound, it's a nice price for a foie fix and a little goes a long way. They'll cut you as small a piece as you like, my slab cost $3 and I still have more to snack on today.
