Did a search of this board, hoping for a great focaccia recipe, but failed to turn one up. Google shows tons, but I'd love some guidance on what type to try. I don't use a bread machine, and I don't think I want to try recipes with milk! Also leaning towards avoiding making a sponge, but am open to convincing on that subject. I'm looking for the kind of focaccia that is about two inches thick, with holes in it, that no one would mistake for having been made of pizza dough. Then, toppings: caramelized onions? sun-dried tomatoes? olives? or, is just a little rosemary and/or sea salt the way to go? I want to round out a meal of pasta with tomato sauce, chicken and portobello mushrooms. SO appreciate the help and this resource!
