We recently purchased a 2nd row beach house. There is a public access to the ocean straight out our front door and a fresh local caught fish market out the back door. We've bought some great fish from them, drum, vermillion snapper, black sea bass, etc. The price they charge for filleting is ridiculous and I have some decent knife skills. Just looking for a good knife for the task of filleting. My first thoughts are the Victorinox Swiss Army 6 Inch Fibrox Pro Boning Knife with Flexible Blade for $33.
Any other suggestions to consider? Is a 6" blade long enough for medium sized fish (5 to 15lb)? Or is that considered small?
