Do fine dining white linen places do waitlists for lunch?

So I am coming to NYC for a short visit of 4 days next week. Will be visiting a friend who has gone vegan recently and plan to do vegan dinner with her and try to hit up some fine dining place during for lunch if I can. Was thinking of jean george or one of the related restaurants, le bernardin and any other suggestions that are currently offer prix-fixe lunches. Of course since this is last minute there appear to be no reservations on opentable for either of them and I was wondering if anyone on here know if it is common for those two in particular and for fining dining places that do prix-fixe lunch to have a waitlist or take walk-ins at the beginning of service.

I have done a search and found some threads on prix-fixe lunch but none about reservations/walk ins.

Also other suggestions are great but not expected. I've only been to NYC once before and on the visit we went to per se, WD-50, Prune, some great food carts, Jamaican and puerto rican which I sure I will have again.
