I want to make a rich and creamy sipping broth, and mid-femur bones just don't have what it takes. I want to make broth from the biggest bone of the animal: the pelvic bone.
Where can I find a beef pelvic bone? I've called grocery meat markets, local butchers, and even an abattoir, but the answer has been either "Sorry, can't get those," or "We only sell wholesale: you have to order a whole carcass and bone it out yourself."
Where do these pelvic bones go, and why are they so hard to find?
Failing the pelvic bone, perhaps the ball at the top of the femur? Even these are very hard for me to find. My local grocery store used to stock them, but they're not available anymore. I can't even special order them. Apparently they pulled the order number from the system.
