It was time to clean the fridge so I decided to make a sandwich with what I could use. Here it is:
Ciabatta bread (a couple of days old but still good)
Roasted Red Peppers
Smoked Fontina Slices
Put them all together and put in the good ol panini press.
It was so good, looks like I'm going to have to stock these items all the time.
On another note, I made some great appetizer size empanadas. One with a cuban piccadillo, one with an indian curry (both using ground beef), and one filled with cream cheese. Used wonton skins, froze individually and then deep fry when we want to eat them. Perfect fo a quick snack or lunch.
Next it's rice krispie treats and shredded chicken marsala for dinner. It's been a good weekend!
