How long does an open bottle of sake last? (In the fridge, of course.)
I went to a sake tasting this weekend, and tried seven different sakes. I came home with half a bottle of my favorite, Suishin ("drunken heart") Daiginjo.
Actually, I almost chose the remainder of the unfiltered sparkling sake that we tasted (Tsukino Katsura Sparkling Nigori). I REALLY liked it, but suspected that the sparkles wouldn't last very long at all. So I passed it up and chose the Suishin.
The problem is that I'll be out each night this week. Will my leftover sake still be OK next week? How about in two weeks?
