Most fabulous brunch: GT, USC, 11MP or . . .?

Hey there,
I want to take my new BF out for his b-day. His fave meal is brunch so I thought maybe brunch at Gramercy Tavern, Union Sq. Cafe or 11 Madison Park or something along those lines. I believe he's been to USC and Bouley Bakery and liked them, I don't mind repeating a place but I personally am a little tired of USC. For some reason in my mind I am leaning toward Gramercy Tavern: I think he would like the atmosphere, I have been dying to go back, and he would love the desserts but I would love your suggestions. He likes everything but has a special penchant for goat cheese and for sweets esp. chocolate, and loves to split lots of little dishes.
I would love your opinion as to some special brunches that have knocked your socks off, even if they are not these famous places, but not every-day places (for instance I thought of Grange Hall but we might do that for a normal Sunday brunch)
P.S. I live in SoHo so downtown is good (Balthazar?) and he is on the UWS but anywhere in Manhattan is fine.
P.P.S. Would any of these places be available for this Sunday? Kinda hoping that for brunch it would be easier to book. The day is 12/15 but we're away that weekend and the next weekend is 12/23 and 24 . . .
