Are your eyes ever BIGGER than your refridgerator/freezer????

I guess that's what happened to me today. A 99 Ranch Market recently opened in Plano, TX and I used to shop there all the time when I lived in S. CA. This was my second trip there, and it is about 100 miles round trip for me.

I tried to control myself, but I piled my shopping cart high and pretty much everything I bought needs to be refrigerated or frozen. Seemed like everything that I wanted was ALSO on sale, so I just had to buy it. I even ended up with some freebies that I don't even know how to cook! I sure could use some recipes for soy sheets since I now have some and although I'm sure I've eaten them, don't have a clue how to cook them!

I now have a beautiful shark steak, a pound of very small shrimp of which half I will make camarones de aguachile, about 4 oz. of sashimi grade salmon (the rest along with tuna was a fabulous sushi dinner tonight) and a wide variety of mushrooms. Also a Japanese eggplant. We won't even mention all of the stuff that is STUFFED into my freezer. And the refrigerator/freezer was pretty full before I did this shopping spree.

I'd love to grill the shark and then do some sort of shrimp, and/or mushroom sauce tomorrow night when bf gets back from WA. Originally I was going to make lasagna since that would be easy to prepare Sunday afternoon and then throw in the oven after I pick him up from DFW. Now I'm thinking about taking advantage of my stuffed fridge/freezer. I'm open for any and all suggestions, especially something that I could prep late afternoon and then quick cooking time when we get back from the airport.
