I have two pounds of eye round, it looked good at the store and thought it was just another braising meat. So, now that I've seen the dry slab of beef up close, I'm a little at a loss. My plan is to cut an X through the meat, stuff it with bacon, wrap it, then braise in red wine and water (no stock or broth on hand).
