I'm making for the first time the Cooks Illustrated make-ahead gravy that someone posted a link to on this page (I've forgotten who posted it, but thank you!). At my market, the giblets came packaged with extra of the fatty deposits around the cavity of the turkey. I didn't add them to the other turkey parts and veggies I'm roasting because I was concerned they'd make the gravy too greasy. What should I do with them? Thank you, and Happy Thanksgiving!
