experiences w/ Los Paisanos butchers on Smith St?

i moved to neighborhood recently, and paisanos is now my nearest butcher's shop. i really wanted to like this place, it seems like they are stocking some interesting stuff. however, i've been dissappointed twice in the service there.

first time, i bought a chicken, and asked the guy to remove the backbone for me. instead he proceded to bludgeon it, chopping it into 7 or 8 parts. the boss guy made him start over when he saw my dismay. however, after much deliberation and consultation with another butcher (not the owner) he still did a hack job: he removed the backbone, but also a lot of the surrounding area. anyway, i took this one. and the chicken did taste good.

today i was in buying steaks. they look good, i'll good 'em tonight. however, i asked the guy (diff guy to above) before i left if they had calves kidneys (i need them this weekend). well, he had no clue what i was asking for! i know english is not his first language, not a problem, BUT: they are kidneys, it is meat, and he's a bloody butcher (or not ...)! he literally did not know what i was talking about, even when i tried to describe it (that's hard to do!). i was furious after i left. :-(

so, anyone else have these sorts of problems there? the owner seems nice, and i thought conscientious, but is he hiring butchers, or just guys who can use a meat slicer and a scales??? i think i'll go back to staubitz ... or got a good recommendation? i live in boerum hill. fresh direct perhaps?...
