So what were everybody's seder menus?

We hosted my parents at our house for a low-key, informal seder. The night before we'd had (elsewhere) overcooked turkey, soggy, unsalted mashed potatoes and overcooked boiled carrots. At our seder we had:

--pot roast, carrots, cranberries and mushrooms in the slow cooker with mustard, pomegranate juice, honey and dried onion, served with boiled potatoes

--roasted asparagus salad with tangerine dressing from Epicurious. I made it KP by subbing red wine vinegar for the rice vinegar and toasted sesame seeds for the peanuts.

--my mom brought desserts: thin lemon cookies, spongecake and KP brownies

How about you all? What was particularly good?
