I was quite taken by the quiche that has a potato crust and a bacon-leek-sour cream filling. Now, it's obviously a big quiche, 9" pan with something to raise the side crust farther, filling of 6 eggs and 4 cups liquid. But is that large enough to bake for about an hour and 20 minutes at 375? - and that's after you've prebaked the crust for half an hour at 450! The recipe warns that the filling is a generous amount and it may fill higher than the edge of the potatoes.
It looks marvellous, but I can't imagine it not overcooking that long at that temp. Opinions?
