Whole eggs v.s. yolks only in Lemon or Lime curd?

My Mum only ever used the yolks, and added them after everything else, off the heat.

All the online recipes I see use whole eggs (varying from 4-8!) and tend to dump everything in all at once.
Which is best, and why does the recipe vary so very crazily.

Finally, anyone tried Russ Parson's from "How to Pick a Peach"?
