Eggplant Parm Hero

hooterville_rutabaga | Nov 16, 2003 03:01 PM

I am looking for recommendations for the best eggplant parmigian hero available. The kind I want should ideally have many slices of thin, non-greasy, ultra tender breaded eggplant, preferably cut the long way. I will consider sandwiches made from round slices as well if they come highly reco'd. Sauce should be homemade if possible, but it's not an absolute requirement. Cheese doesn't have to be superior, pizza grade is fine, as I find that the sauce and the eggplant are the two factors which determine the quality of the overall sandwich. For the record, I have had the $7 DiFara rendition, and it was very good, but I would love to have better still. If you know of any in Manhattan, I'd like to know about that too, but I am posting here because four boroughs are better odds than one borough.
