I really dislike "regular" (now often called "Italian")eggplant, no matter how prepared (even babaganoush). But I love Asian eggplant. A friend recently tried to convince me that the only difference is that Asian varieties are harvested at a more immature stage. I'm extremely dubious of this claim.

Anyone have any light to shed on eggplant varieties?
