Our first visit to Echigo was a revelation! We've had great sushi in San Fran and NYC, and thought it was only about great quality fresh fish. Echigo leaps beyond, starting with beautiful buttery fish and balancing nuances of taste with light lemon essence, barely-there sweet miso sauce, or light toastiness of sesame seeds. The nori on the hand-rolls was freshly toasted, like it's supposed to be but never is at most places. And they had several unusual choices, such as Ono and sweet shrimp eggs. No question best sushi we've ever had. Thank you.
