eating Winter Lamb

So one winter day a friend orders lamb kabobs, and the meat is unpleasantly fatty. He complains and the kabob man says you shouldn't order lamb in the winter because the meat stores too much fat. I don't eat a lot of lamb, but I ordered it the other day, and lo, it had this fatty squishinness I associate more with fatty beef. Is this true about lamb? Do people like it this way, or leaner?
