Having a good selection of kitchen knives makes me happy and I'm not happy.

It is time to change my kitchen and get back to enjoying the wonders of cooking. Not being a professional or in touch with what is the best knife, I need help.

A few practical sizes will be fine a knife set makes no sense.
Looking at the Mac Superior blade, but I am not sure about the round end design nor do I like the whole (to hang the knife) at tip.
Another consideration is the Mac Pro (I don't think this is stainless), the knives won't go into the dishwasher but not sure I'm ready for Carbon.
Heard go things about JCK Kagayaki brand from Koki but no one else?

Just want a middle quality, price knife that is not to heavy for a ladies hand.

Any suggestions would be appreciated.
