Dutch process problem

recently bought a bag of Cacoa Barry dutch process cocoa. everything that i've made with it so far has come out slightly dry, even though i'm following recipes that call specifically for Dutch process. i don't have this problem with good old Hershey's. am i doing something wrong, or do i need to try a different brand?
