duck tonight.

i bought a six-pound duck, frozen, at my local grocery store. i let it defrost in the refrigerator. after removing the giblets, i thought a rodgers, zuni chicken seasoning approach may be in order. i salted the bird top and bottom three days ago. it's in the oven as we speak. carrots, onion and quartered potatoes round out the mix.

we'll see.
