It ocurred to me that i've never seen any recipes
calling for ground duck meat. You can find numerous recipes for chicken, turkey, and your usual red meats
meatballs/patties/meatloafs, but what about duck? I checked internet, and the only thing i found are duck sausages.
I was inspired by today's recipe of the day in F&W, which is an escarole soup with turkey meatballs, and i'm thinking it should be way more delicious with duck meatballs, and maybe some shiitakes?
