Duck Confit & Fresh Garlic Sausage in Nashville

I recently relocated from NYC to Nashville and desperately miss the ability to find any kind of food you desire at any time of day. I want to make Cassoulette this week and am in need of a great butcher shop for some unique ingredients. Specifically, duck confit, fresh garlic sausage, smoked salted slab bacon & lamb bones.

There used to be a meat market on 53rd street (Johnson's), they've now closed... Is there a specialty butcher in Nashville? I'm willing to travel as far as Franklin if I can find a real butcher, vs. a supermarket.

I'm not really looking for recommendations to Wild Oats, Fresh Market, Harris Tweeter or any of the other grocery store chains, however nice they are, I guess I'm looking for something a little more special. Does it exist in middle Tennesee?
